Winemaking                      
After cool early morning harvest, three unique parcels were de-stemmed with 4 hours skin contact in the press ensuring a suitable amount of colour and flavour concentration. Only premium freerun and light pressing juice fractions were retained and fermented cool with selected aromatic yeast strain. One of the three ferments was held for three months on gross yeast lees to build palate weight and complexity before being racked from barrel and carefully blended with other fresh vibrant stainless steel fermented components
